Blue-cheese piercer machine
As its name indicates this equipment is for the piercing of blue-veined cheeses.
Piercing creates an aeration process in the pate allowing the development of the existing blue mould. The ventilation chimneys created by the piecrcing will facilitate the release of harmful carbon dioxide contained in the cavities of the cheese, allowing it to be replaced with oxygen which is essential for the growth of the blue mould.
Two manually-operated models are available. The choice depends upon the quantity and size of cheeses to be made:
- hand-operated by means of a handle
- hand-operated by means of a lever
- Hand-operated by means of a handle:
this equipment is made entirely of stainless steel. The operating handle is centrally mounted and each piercing needle is 98mm long and 3mm in diameter.
- Hand-operated by means of a lever:
made entirely of stainless steel, the equipment is fitted with a manual lever system to operate the needles.
The cheese is positioned on a base which is adjustable for different heights of cheese.
A location bar ensures each cheese is in its correct position prior to piercing. The cheese is thus supported in position ensuring the piercing is straight.
A fixed horizontal handle allows the equipment to be moved easily. Lateral protection is provided by plexiglass screens ensuring a safe working environment.
