Installation of a brining system in a cheese farm
Objective :
To install a brining system for a cheese dairy.
Circumstance :
The dairy making pressed and uncooked cheese wanted to reduce time spent on brining . On investigation, we found that this stage of the process was taking eight hours. Indeed, with three cheeses of different sizes and curing times a single brining cage was no longer suitable .

At the same time the owner wanted to improve the salting homogeneity of the cheeses. Currently this step was being done manually by loading the cheeses individually in the brining cage.
The Avedemil solution :
After a discussion to understand the objectives we proposed two possiblesolutions, dependng upon budget constraints:
- Two or three plastic bins, or
- A complete brining installation
The installation of several plastic brining cages reduces the time spent by cheese makers for this stage. Each cage contains a single type of cheese and the brining solution can therefore be adapted to the requirements of each cheese. In addition, two or more cages make it possible to separate cheese number three (which requires the longest curing time) from the other two cheeses, thus reducing the overall time of the brining stage to that of cheese three (4h30 plus the time to unload the cheeses).
The brining system, seen on the plan above, consists of several brining cages in which the cheeses are deposited on grid shelves. A hoist lifts the loaded brining cages up and lowers them into the desired position in the brining tank. The advantage being that all the cheeses arrive in the brining tank at the same time.
