Curd mill and Cheddar moulds
Equipment for the manufacture of cheddar includes:
- Curd mill
- Cheddar moulds
The Avedemil curd mill is a hand-operated mill for cutting curd into small pieces for the manufacture of Cheddar. The manufacture of Cheddar cheese has a unique salting process called "cheddarisation": once drained the curd blocks are cut into small pieces to be mixed with salt.
After salting, the mixture is distributed in Cheddar moulds to form Cheddar wheels.

The curd is cut by two stainless-steel rotors and a fixed stainless-steel comb. The rotors are easily removed for cleaning. The polyethylene gearing is driven by a stainless-steel operating handle.
The feed hopper and machine frame are made of stainless steel. The machine frame is mounted on castoring wheels and the overall size is a function of your available space. For product recovery the curd mill can be fixed over a table or can feed directly onto a stainless-steel tray.
- The Cheddar mould :
The Cheddar mould is made of stainless steel, bottomless and randomly perforated. The deep press plate facilitates uniform pressing. The mould is 350mm high and 215mm diameter.
