Equipments for the manufacture of Mozzarella and other stretched cheeses.
1. Stretching machine :
Facilitates the production of stretched cheese. The curd blocks are manually fed to the upper hopper. They are then crushed and transferred into a rotating drum made for the stretching of the dough.
The drum has peripheral exit holes from which Mozzarella balls are ejected. Several capacities of stretching machines are available according to your needs:
- Stretching machine from 20 to 60 kg/h
- Stretching machine of 90 kg/h
- Stretching machine of 200 kg/h
2. Steam cooker for analogue Mozzarella :
For the production of Mozzarella that achieves a homogeneous cooked texture.
- Stretching machines:
All our stretching machines are made of AISI 304 stainless steel.
The moulding drums are made from HDPE food-grade plastic.
The stretching machines are supplied with a moulding drum to make 200g balls. The machines require a supply of hot water.
Acidification containers facilitate the lowering of the curd pH as well as the transporting of the curd to the stretching machine. The cooling tray recovers the formed Mozzarella and solidifies the curds.
- Steam cooker:
Built entirely of stainless steel (stainless steel 304 on the outside and stainless steel 316 on the inside), the parts in contact with the product are Teflon-coated.
A control panel with a touch screen permits selection from several pre-programmed recipes.
The equipment has a capacity from 100kg/batch which is approximately 300kg/h.
The feeding of the raw material is done by the upper hopper then two continuous screws feed the blocks into the moulding drum. Four steam injectors soften the curd.
