Tray and draining mat
The set of a tray with a draining mat is used to mould soft cheese into a bottomless block mould.
For individual moulds, the trays are used to hold moulds filled with curd. The trays are stacked in a column.
Two types of mat are available each with its own particular use:
- For block moulding, a rigid mat should be used.
- When demoulding lactic cheeses, they can be placed on a thin and flexible draining mat to avoid the cheese being marked by grid-shelf wires.

Two models of trays are available and are identified by their material: stainless steel or plastic.
1. The classical dairy stainless-steel tray with four support rails.
2. The plastic tray has special features:
- Light- it weighs less than 3kg!
- Practical - clamps fasten the draining mat
- Stackable - thanks to interlocking pins. Ideal for storage and draining
- Draining through peripheral drainage holes
- Suitable for a mechanical turner.
Two models of mats are available depending on their use:
- The draining mat for soft cheeses is rigid and has two distinct sides: one smooth (cheese side) and one raised rail (shelf side).
- The draining mat for lactic cheeses is flexible, placed on the drying shelves. It has an open lattice to create ventilation.
